- Onion, finely chopped
- Celery, finely chopped
- Tomatoes, diced

- Lime Juice
- Soy Sauce
- Ketchup
- Brown Sugar
- Ground Allspice
- Ground Nutmeg
- Garlic, minced
- Scotch Bonnet Pepper, finely minced (optional)

Bereidingswijze
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large bowl, combine the grated pomtajer, orange juice, lime juice, soy sauce, ketchup, brown sugar, allspice, nutmeg, garlic, Scotch bonnet pepper (if using), salt, and pepper. Mix well.
- In a separate bowl, season the chicken pieces with salt and pepper.
- Heat vegetable oil in a large skillet over medium heat. Add the chopped onion and celery and cook until softened, about 5 minutes. Add the diced tomatoes and cook for another 3 minutes.
- Add the seasoned chicken to the skillet and cook until lightly browned on all sides. The chicken does not need to be fully cooked at this stage.
- Pour the chicken mixture into the bowl with the pomtajer mixture and mix well to combine.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake in the preheated oven for 1 hour 30 minutes, or until the top is golden brown and the pom is cooked through.
- Let the pom cool slightly before slicing and serving. Serve warm.
