Ingrediënten

  • chicken thighs
  • wooden skewers
  • sweet soy sauce (kecap manis)
  • shallots
  • garlic cloves
  • ground coriander
  • ground cumin
  • vegetable oil
  • smooth peanut butter
  • sambal oelek
  • lime juice
  • warm water

Bereidingswijze

  1. In a bowl, combine 1 tablespoon of sweet soy sauce, minced shallots, garlic, ground coriander, cumin, and 1 tablespoon of vegetable oil to make the marinade.
  2. Add the cubed chicken thighs to the marinade, mix well, and let rest in the refrigerator for at least 30 minutes.
  3. Thread 4 to 5 pieces of marinated chicken onto each soaked wooden skewer.
  4. To make the peanut sauce, heat a small saucepan over medium heat. Add the peanut butter, warm water, sambal oelek, remaining sweet soy sauce, and lime juice.
  5. Stir the sauce continuously until smooth and thickened. If too thick, add a splash of warm water. Remove from heat and set aside.
  6. Preheat a grill pan or outdoor barbecue over medium-high heat and lightly oil the grates.
  7. Grill the chicken skewers for 10 to 12 minutes, turning occasionally and brushing with remaining marinade, until nicely charred and cooked through.
  8. Serve the hot satay skewers immediately with the warm peanut sauce drizzled over top or served on the side for dipping.
