Quick Afghan Kabuli-Inspired Rice Bowl
A simplified, speedy take on the classic Afghan Kabuli Palaw, perfect for a quick lunch or dinner. This version focuses on readily available ingredients and minimizes cooking time.

- Basmati Rice
- Water or Chicken Broth
- Olive Oil
- Onion
- Garlic
- Grated Carrot
- Raisins
- Slivered Almonds
- Ground Cumin
- Ground Cardamom
- Salt
- Black Pepper
- Cooked Chicken or Lamb (optional)
- Orange Zest
Bereidingswijze
- Heat olive oil in a medium saucepan over medium heat. Add onion and cook until softened, about 3 minutes.
- Add garlic and cook for another minute until fragrant.
- Stir in the grated carrot, raisins, almonds, cumin, cardamom, salt, and pepper. Cook for 2 minutes, stirring occasionally.
- Add the rinsed rice and stir to coat with the spice mixture.
- Pour in the water or chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is cooked through and the liquid is absorbed.
- If using, stir in the cooked chicken or lamb (or any protein of your choice) and orange zest (if using). Fluff with a fork before serving.
