Ayam Betutu Gilimanuk - Balinese Spiced Chicken
Ayam Betutu is a classic Balinese dish of chicken richly spiced with a complex blend of herbs and spices, traditionally slow-cooked for maximum flavor. This recipe offers a slightly quicker version, perfect for a flavorful weeknight meal.

- coconut oil
- chicken broth or water

Bereidingswijze
- Prepare the spice paste (Bumbu): In a food processor or blender, combine shallots, garlic, ginger, galangal, turmeric, candlenuts, chilies, and shrimp paste (if using). Blend until a smooth paste forms.
- Heat coconut oil in a large pot or Dutch oven over medium heat. Add the spice paste and lemongrass stalks. Sauté for 5-7 minutes, or until fragrant and the paste starts to deepen in color.
- Add the kaffir lime leaves and chicken pieces to the pot. Toss to coat the chicken thoroughly with the spice paste.
- Pour in the chicken broth or water. Bring to a simmer, then reduce heat to low, cover, and cook for 35-40 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
- Season with salt and sugar to taste. Stir in the lime juice.
- Remove the lemongrass stalks and kaffir lime leaves before serving. Serve hot with steamed rice and your favorite Balinese side dishes (like lawar or urap).
