Bereidingswijze
- Prepare the spice paste (bumbu): In a food processor or blender, combine shallots, garlic, chilies, ginger, galangal, turmeric, candlenuts, and shrimp paste (if using). Blend until a smooth paste forms.
- Heat coconut oil in a large pot or Dutch oven over medium heat. Add the spice paste and cook, stirring frequently, until fragrant, about 5-7 minutes.
- Add the lemongrass and kaffir lime leaves to the pot. Stir to combine.
- Add the chicken pieces to the pot and coat them thoroughly with the spice paste. Sear the chicken on all sides for about 5 minutes.
- Pour in the chicken broth (or water). Bring to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
- Season with salt and sugar (if using) to taste. If the sauce is too thin, remove the chicken and simmer the sauce uncovered until it thickens slightly.
- Serve hot with steamed rice and your favorite Balinese side dishes (like lawar or urap).
