Bereidingswijze

  1. Prepare the spice paste (bumbu): In a food processor or blender, combine shallots, garlic, chilies, ginger, galangal, turmeric, candlenuts, and shrimp paste (if using). Blend until a smooth paste forms.
  2. Heat coconut oil in a large pot or Dutch oven over medium heat. Add the spice paste and cook, stirring frequently, until fragrant, about 5-7 minutes.
  3. Add the lemongrass and kaffir lime leaves to the pot. Stir to combine.
  4. Add the chicken pieces to the pot and coat them thoroughly with the spice paste. Sear the chicken on all sides for about 5 minutes.
  5. Pour in the chicken broth (or water). Bring to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
  6. Season with salt and sugar (if using) to taste. If the sauce is too thin, remove the chicken and simmer the sauce uncovered until it thickens slightly.
  7. Serve hot with steamed rice and your favorite Balinese side dishes (like lawar or urap).
