Ayam Betutu - Balinese Spiced Chicken
Ayam Betutu is a classic Balinese dish featuring chicken marinated in a rich and complex blend of spices, then traditionally steamed or roasted. This recipe offers a simplified oven-baked version for convenience, while retaining the authentic flavors of Bali.

Bereidingswijze
- Prepare the spice paste (Bumbu): In a food processor or blender, combine the shallots, garlic, red chilies, ginger, galangal, turmeric, candlenuts, and shrimp paste (if using). Blend until a smooth paste forms. Add a little oil if needed to help blend.
- Marinate the chicken: In a large bowl, rub the spice paste all over the chicken pieces. Make sure to coat them thoroughly. Add the lemongrass stalks and kaffir lime leaves to the bowl. Cover and marinate in the refrigerator for at least 2 hours, or preferably overnight.
- Preheat the oven to 350°F (175°C).
- Bake the chicken: Arrange the marinated chicken in a baking dish. Pour the chicken broth around the chicken. Drizzle with coconut oil.
- Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for another 15 minutes, or until the chicken is cooked through and the skin is golden brown and crispy. Check the internal temperature of the chicken to ensure it reaches 165°F (74°C).
- Rest and Serve: Let the chicken rest for 10 minutes before serving. Serve hot with steamed rice and your favorite Balinese side dishes, such as lawar (vegetable salad).
