Ingrediënten
- chicken thighs
- wooden skewers
- sweet soy sauce (kecap manis)
- shallots
- garlic cloves
- ground coriander
- ground cumin
- vegetable oil
- smooth peanut butter
- sambal oelek
- lime juice
- warm water
Bereidingswijze
- In a bowl, combine 1 tablespoon of sweet soy sauce, minced shallots, garlic, ground coriander, cumin, and 1 tablespoon of vegetable oil to make the marinade.
- Add the cubed chicken thighs to the marinade, mix well, and let rest in the refrigerator for at least 30 minutes.
- Thread 4 to 5 pieces of marinated chicken onto each soaked wooden skewer.
- To make the peanut sauce, heat a small saucepan over medium heat. Add the peanut butter, warm water, sambal oelek, remaining sweet soy sauce, and lime juice.
- Stir the sauce continuously until smooth and thickened. If too thick, add a splash of warm water. Remove from heat and set aside.
- Preheat a grill pan or outdoor barbecue over medium-high heat and lightly oil the grates.
- Grill the chicken skewers for 10 to 12 minutes, turning occasionally and brushing with remaining marinade, until nicely charred and cooked through.
- Serve the hot satay skewers immediately with the warm peanut sauce drizzled over top or served on the side for dipping.
